Roasted cauliflower topped with California walnuts, cream cheese, chilli and parsley

Ingredients

  • 150 grams California walnuts
  • 1 Cauliflower cut into 2 3cm slices
  • 2 tsp Harissa paste
  • 1 tbsp Salt
  • 1/2 Lemon for the juice
  • 2 tbsp Flat leaf parsley chopped
  • 2 Shallots finely chopped
  • 1 Red chilli chopped
  • 2 tbsp Cream cheese

Instructions

  • Brush the cauliflower steaks with the Harissa paste and then grill on both sides for 4 minutes.
  • Place the grilled cauliflower into an oven proof dish.
  • Mix together the chopped California walnuts, parsley, shallots and chilli.
  • Divide the cream cheese between each steak and spread a think layer on each steak.
  • Top with the California walnut mixture and press gently, the cream cheese will help it stick.
  • Cook in a pre heated oven, 170C for 20 minutes until golden and crisp.
