Roasted cauliflower topped with California walnuts, cream cheese, chilli and parsley
Ingredients
- 150 grams California walnuts
- 1 Cauliflower cut into 2 3cm slices
- 2 tsp Harissa paste
- 1 tbsp Salt
- 1/2 Lemon for the juice
- 2 tbsp Flat leaf parsley chopped
- 2 Shallots finely chopped
- 1 Red chilli chopped
- 2 tbsp Cream cheese
Instructions
- Brush the cauliflower steaks with the Harissa paste and then grill on both sides for 4 minutes.
- Place the grilled cauliflower into an oven proof dish.
- Mix together the chopped California walnuts, parsley, shallots and chilli.
- Divide the cream cheese between each steak and spread a think layer on each steak.
- Top with the California walnut mixture and press gently, the cream cheese will help it stick.
- Cook in a pre heated oven, 170C for 20 minutes until golden and crisp.
