Walnut Cauliflower Cheese

Ingredients

small or 1 large head of cauliflower
cut into florets
For the sauce
570
ml
dairy free milk

plain flour

teaspoon
of salt
Pinch
of pepper

teaspoon
of English mustard
1
teaspoon
of nutmeg
1
tablespoon
of nutritional yeast

ground
For the cheese topping

dairy free cheese
grated

slices
of bread
blitz into breadcrumbs

Handful of chopped California Walnuts
Instructions
Bring a large saucepan of water to the boil and add the cauliflower florets. Boil for 15 minutes before draining and leaving to one side.
Preheat oven to 180c.
In a large saucepan over a medium heat add all of the ingredients for the sauce and combine until the sauce thickens.
Add the cauliflower to the sauce and coat evenly before pouring into a large ovenproof dish.
Combine the grated cheese, breadcrumbs and ground walnuts together before sprinkling on top of the cauliflower.
Finish by topping with a handful of chopped walnuts and bake in the oven for 45-50 minutes.
